Caramel Apple Pie





Ingredients:

Pie Crust:

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup plus 1 tablespoon butter flavored shortening, chilled
  • 1/3 cup ice water
  • 1 tablespoon vinegar
  • 1 egg, beaten

Filling:

  • 6 cups apples (Jonathan or Granny Smith)
  • 1/2 cup packed light brown sugar
  • 1/2 cup sugar
  • 1/4 cup all-purposeflour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 4 tablespoons heavy cream
  • 4 tablespoons butter

Streusel Topping:

  • 1/2 cup all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon butter
  • 2 toffee bars or 3 ounces chocolate covered peanut or pecanbrittle, crushed

Directions

Pie Crust:
1) Chill all ingredients, including the flour and vinegar
2) Combine the flour, salt and sugar. 
3) Cut in shortening with a pastry blender until the mixture resembles cornmeal. 
4) In another bowl, mix water and vinegar with the beaten egg. 
5) Add the liquid mixture, 1 tablespoon at a time, to the flour mixture, tossing with a fork to form a soft dough.
Filling:
6) Preheat oven to 450 degrees F.
7) Peel and slice apples. Sprinkle with lemon juice. 
8) Combine dry ingredients in large bowl and add apples. Toss to mix. 
9) Add vanilla and cream. 
10) Melt butter in heavy skillet. Add apple mixture and cook approximately 8 minutes, to soften apples. 
11) Turn into pie shell.
Streusel Topping:
12) Combine the flour and sugar. 
13) Mix in butter with fork until coarse crumbs. stir in the crushed toffee bars. 
14) Sprinkle over pie. Add top crust. Seal, flute edge and vent top. 
15) Brush with beaten egg white and sprinkle with sugar.
16) Bake for 15 minutes. Reduce heat to 350 degrees F and bake 45 minutes longer.

Cinnamon Stove Granola


Ingredients:
  • 1 1/4 tablespoons olive oil
  • 5 cups rolled oats
  • 1 tablespoon ground cinnamon
  • 1/3 cup butter
  • 1/4 cup honey
  • 1 tablespoon molasses
  • 1/2 cup packed brown sugar
  • 1/2 cup blanched slivered almonds (optional)
  • 1/2 cup dried cherries (optional)

Procedure:

1) Heat the olive oil in a large stockpot over medium heat. 
2) Combine the oats and cinnamon and add them to the pot. 
3) Cook and stir until lightly toasted, stirring constantly, 3 to 4 minutes. 
4) Pour the oats out onto a large baking sheet and add the butter to the pot. 
5) When the butter has melted, stir in the honey, molasses and brown sugar. 
6) When the mixture starts to simmer, return the oats to the pot and continue to cook and stir until coated and hot.
7) Remove from the heat and stir in the almonds and cherries. 
8) Pour onto a large cookie sheet and allow to cool. 
9) The granola will harden as it cools. 
10) When cool, transfer to an airtight container and store at room temperature.
